Reshmi Kebabs are one of the traditional dishes of the Mughal era, Reshmi Kebab gets its name from the succulent meat. The meat is marinated and made soft and smooth as silk. The meat balls are grilled in tandoor by brushing with generous amount of clarified butter. Tandoor is an earthenware pot-oven that the food is cooked in. The tandoor is immensely hot and cooks the meat very fast from all sides at once. The dish is served hot with chutneys made from mint or tomato sauce. It is generally served as an cocktail snack.
